Heart Healthy Apple Bread

Bossman and I have a serious sweet tooth and I'm always looking for healthier alternatives to, say, peanut butter Oreos or Little Debbie cakes. This apple bread recipe uses applesauce and honey for sweetening and consistency and whole wheat flour as a healthy alternative. Try it, you might like it!

This is super easy and really tasty! This recipe makes two loaves and it freezes well. So, make up a batch to satisfy your sweet tooth and slice some to put in freezer bags for later.

Start with one (very pretty) Granny Smith apple...





Peel it and then slice it and remove the core. (check out the knife my future daughter in law got me for Christmas - love them!)






Use a cheese grater to grate your apple. Set off to the side.






Put  3 cups of whole wheat flour in a deep mixing bowl. I stocked up on fresh ground whole wheat flour from my local farmer's market last summer, but you can buy whole wheat flour at the grocery store. 





Add 1 tsp of baking powder and 1 tsp of baking soda to the whole wheat flour. See how easy this is :)






Also add 1/2 tsp of salt, 2 tsp of cinnamon and 1 tsp of nutmeg to your dry ingredients.




Your mixture will look like this. Take a fork and mix all dry ingredients well.





Make a "well" in the center of your dry ingredients. This is to put your liquid ingredients in and allows for better mixing.






Put 1 1/2 cups of applesauce in your "well". Note: I prefer to use unsweetened applesauce, but all I had on  hand was sweetened cinnamon applesauce. This will just make it a little sweeter than usual.




Add 1 cup of honey to your "well".





Add 4 eggs (slightly beaten) and 1/2 cup of melted butter. I use Smart Balance Light "butter" because it's dairy free and healthier for you than margarine. (your mixture isn't too pretty at this point, but that's okay).





Mix a little with a fork, just to get everything moistened up.






Add your grated Granny Smith apple to your mixture and mix well. No need to even plug a mixer in. Just mix well with a spoon.




Pour into 2 loaf pans. Bake in 350 degree oven for 45-55 minutes or until toothpick inserted in center comes out clean.





Apple bread fresh out of the oven! Yummy!
