How to Roast Spaghetti Squash

Have you ever wondered how to roast spaghetti squash. Or what to do with it, in general? When we eat at Ruby Tuesday's, we almost always get roasted spaghetti squash and zucchini as our sides. We love it, but I never really knew how to fix it or roast it - or what else to do with it. Then, I sat down and figured it out. It's actually very easy. I love this picture. The evening sun was coming in the window just right and made my spaghetti squash look just a little mysterious. That's kind of how I felt when I started to work with it. How is this thing going to make "spaghetti"? Start by cutting the "top" end off. This is the hardest part of roasting a spaghetti squash. It is TOUGH. So, get a good sharp knife and dig in (carefully though!) Preheat your oven to 375 degrees. Put the whole spaghetti squash in the oven while it's preheating. Blogger Pictures Not Showing Up

I posted last week about getting in here to reorganize my blog and realizing that some of my pictures in some older blogs were missing. So, ya know, that took precedence and I was off hunting down where in the world my pictures went. I knew I hadn't done anything (like delete - gasp!). I searched and researched and hunted for an answer. I checked my Google+ photos and my Picasa photos. (In case you don't know ((which I didn't know)) Blogger doesn't actually host your photos. Even if you upload directly to Blogger, they are stored either on Picasa or on Google+ - and that's another blog post.) Anyway, I checked my Picasa albums and made sure all photos were set to "Public". I checked Google+ and made sure they were all good to go. Yep. All was a-okay on both of those. I'm a researcher and a thinker, so I spent the next week or so, checking this and that and then rechecking this and that. Take time to contemplate. Then rechecking again.

Why We Moved Into the Basement...Small Spaces...Tiny House

We've been asked several times why we moved into the basement of our house. There are actually two reasons for this. First, I can't physically do "cold" anymore. Second, it's a test to see if we can downsize and live in a smaller space. We've been down here approximately three weeks.....and we love it! First, I have Raynaud's Syndrome (or disease if you prefer). I was diagnosed about 14 years ago and it gets worse with every passing winter. I "almost" totally forget I have it in the summer, but when winter hits, I am miserable! Raynaud's is an autoimmune disorder where in cold temperatures or extreme emotion (stress), my sympathetic nervous system hyper-activates. My blood vessels constrict too much (called vasoconstriction) and blood flow & oxygen are depleted to my extremities. Mainly my fingers, toes and nose.
